It's finally summer vacation, and I'm taking full advantage of being able to eat breakfast. I bought a variety pack of Siggi's Icelandic skyr. After taking a few bites, I've come to the realization that I'm just not a yogurt person. Great. I have eleven unopened packages of something that I can't bring myself to eat. This recipe is the solution to this dilemma. Bonus: It's delicious!

Serving Size: one 24 ounce smoothie

Ingredients

1  5.3 ounce container of Siggi's low fat yogurt ( I've used mixed berry and vanilla.)

2 ounces of kale- I measured by the handful

1 kiwi- I used golden kiwi. No need to peel, but I do take off the end of the kiwi. 

1/2 cup of pineapple- I used frozen, but fresh would also be delicious. I would avoid canned if it's in liquid with added sugar. 

1 scoop of vanilla protein- I use optimal nutrition, but use what you enjoy.

1 600 mL container of coconut water

 

Directions

Put all of the ingredients in the blender. I add fruit and kale first. Next, I add the yogurt, protein, and then the coconut water. I have a ninja blender, and I put it on the highest setting to get the kale broken down as much as possible. If the chunks look too big, then run it on another cycle. I don't add ice because I don't particularly like the way it waters down the smoothie. That's why I like the frozen pineapple instead. 

I will say the kale doesn't break down all the way, and the smoothie is left with little green flecks throughout, but the rest of the smoothie is so tasty that I really can't taste it. Maybe I'm a little biased. I did drink Dr. Berg's 3 ingredient  kale smoothies everyday for 4 months straight. 

I like that I have to chew a little bit. It actually affects satiety. That's my biggest complaint about smoothies or juices ( too many calories to be hungry that soon after eating). It also helps that there are 41 grams of protein. I had this post workout and kept me full until my next meal.
